We can't remotely block a lost or stolen Nintendo Switch, but we can unlink our account. Assuming you've already put in the relevant complaints or denunciations, this little guide summarizes what you can do as a user of your console.

If you haven’t record the serial number when it got stolen, there is another option. If you have the Switch Parental Controls app on your phone, you can find your serial number on it.
Perhaps one of the first fundamental steps is to contact with Nintendo and explain the situation to your Customer Care team. You can call their support line at 1-800-255-3700 to ask for help. We don't know exactly what Nintendo can do with the system by having the code; it's likely that it can block the console's online functions or simply unlink your account from the machine.
If you have added a credit card to your account, you should remove it first by following these steps:

Step 3. click the Delete button next to your credit card.
The only thing you can do from an external computer is unlink your Nintendo account from your system. This will eliminate games downloaded from the eShop and also access to the shop itself from your account, which will prevent others from making purchases on your behalf if you had a registered payment method.
To do so, you can follow these steps:
Step 1. Go to accounts.nintendo.com.
Step 2. Logged in with your Nintendo account.
Step 3. Click Remove Registration from the main console.
Step 4. Here you may be asked to enter your password again.
Step 5. Finally, confirm by clicking on "Delete Registration".
We can also do this by going to my.nintendo.com, logging in, going to "Account Settings", and going to "Store Menu"; from there we'll follow the steps above.
Keep in mind that it is only possible to delete one record per year (through the web).
Then, when you log back in to your new console, you will be able to download the digital games you would have purchased from the eShop, as well as retrieve compatible saved games if you subscribe to the Nintendo Switch Online service.
It's a pity that Nintendo doesn't have a blocking method such as Google and Apple's that allows us to disable or delete any data that includes the mobile until the device is back in the hands of the owner.
Even the screen blocking method of the Switch leaves something to be desired (it could include a pattern or PIN system as a minimum to increase security against outside hands).
