The principle of operation is similar to ZigBee gateways, the device with the Bluetooth module connects to one of the devices that has 2 wireless interfaces at a time, keeps in touch with the device by bluetooth, and communicates with the cloud by Wi-Fi. Schematically, it looks like this:

This way of working allows you to ensure long-term operation of smart devices from the battery and, unlike devices with ZigBee protocol, the ability to connect directly to the device.

Why not connect directly with WiFi?

For easy installation and long battery life, most device apply mare stable and low-power link protocol, including ZigBee protocol and Bluetooth protocol.

Connecting to the Xiaomi Bluetooth Gateway

The devices are automatically connected to the gateway if it is in range of visibility. This can also be tracked in the BLE Gateway tab if you enter the gateway:

I didn't have an instant connection to the gateway, the device automatically connected 15 minutes after it was detected.

At this stage, there is no complete control of the devices, you cannot remove the gateway, or the device connected to it. Perhaps this functionality will be added later.

In general, a Bluetooth gateway is an optional device. All of the above gadgets can be controlled from a smartphone (but the functionality will be slightly cut off), but as soon as you move away from the apartment, the devices in the application will go offline.

P.S. ZigBee Gateway 2 does not have the Bluetooth protocol, and these devices are not connected to it.
